This 100% Pinot Noir, Blanc de Noirs, as a favorite grape variety of our village.

Color: Gold
Aromas and sensations:
Peony, iris, Garrigue
Cherry, plum, liquorice
Tangy apricot, pink grapefruit
Fleshy
Agreements:
- Duck fillets breaded with gingerbread, roasted figs with honey and mashed potatoes with hazelnuts
Ricotta cheese-cake with orange blossom, apple, figs and walnut nougatine

Champagne Brut Exception

The pinot blanc, an old grape variety formerly planted in our hillsides, produces today a rare and secret champagne.

Color: Gold
Aromas and sensations:
Vine peach, citrus
White flowers, hawthorn
Menthol, candied lemon, balsamic
Fine and greedy
Agreements:
- Raw fish: Saint-Jaques with citrus fruits
- Lemon chicken

Brut Terre Blanche

Champagne Terre Blanche Brut

This champagne « Blanc de Blancs » from chardonnay is a blend with 20% of reserve wine aged in oak barrels. 

Color: Gold
Aromas and sensations:
Dried apricots, pear, vanilla
Salty and lemony, fresh
Agreements:
- Aperitifs
- Chipirons a la plancha
- Toasted scallops

Vin Rodé des Riceys

Rosé des Riceys Defrance

Louis XIV was fond of it: the legendary Rosé des Riceys is vinified with fine Pinot Noir from the sunniest and steepest slopes of the town.

Color: Tiled
Aromas and sensations:
Wild strawberry jam, Burlat cherry
roasted cocoa beans
Sweet spices, liquorice
Supple and delicious, round
Agreements:
- White meats
- Game
- Chaource, semi-fresh goats, brie de Meaux, 24-months-matured Comté
